Ingredients:
3 salmon fillets
1 cup ricotta cheese
1 cup crumbled fetta cheese
Salt and pepper to taste
1 cup packed baby spinach
Extra virgin olive oil
Chopped dill
Chopped oregano
Dijon Mustard Sauce:
1 tablespoon Dijon Mustard
3 tablespoons unsalted butter
1 dessertspoon Worcestershire sauce
1 tablespoon white vinegar
2 tablespoons olive oil
Utensils:
Chopping board
Sharp knife
Mixing bowl
Cooking twine
Baking dish
Small saucepan
Serving dish
- Preheat oven to 180 degrees
- Cut salmon pieces in half lengthways
- In a bowl, combine ricotta and fetta, mashing and stirring with a fork until well blended
- Season with salt and pepper
- Arrange half the spinach over the salmon pieces
- Evenly spread the cheese mixture on top of the spinach, then top with remaining spinach
- Gently roll up salmon and secure with cooking twine
- Place salmon in a baking dish coated with olive oil
- Brush the top and sides of the salmon with olive oil
- Sprinkle with salt and pepper and top with chopped dill and oregano
- Bake for 15 to 20 minutes, or until fish is just cooked through
Sauce:
- Combine all ingredients and heat until butter melts
- Stir to blend
- Pour over salmon and hot vegetables
