Ingredients:
500 g Kumera (Sweet Potato) (you can use pumpkin also)
1/2 teaspoon chilli oil
1 tablespoon olive oil
1/4 cup pistachios, roughly chopped
1 pinch sea salt
200g green beans
Dressing:
2 tablespoons olive oil
1 tablespoon lime juice
1 clove garlic, crushed
1 tablespoon honey
pinch of chilli flakes
3 handfuls of baby spinach
Utensils:
Chopping board
Sharp knife
Vegetable peeler
Baking Dish
Microwave or steamer
Small jar to mix dressing in
Serving dish
- Preheat oven to 180 degrees
- Place the Kumera on a baking tray with the chilli oil and 1 tablespoon olive oil, pistachios and sea salt
- Roast for 20 minutes
- Steam the beans until tender. Drain and refresh in cold water
- To make the dressing, combine olive oil, lime juice, garlic, honey, and chilli flakes in a small jar and shake
- Place spinach leaves and green beans on serving platter
- Add salad dressing and top with roast Kumera and pistachios
