Spinach, Bean, Kumera & Pistachio Salad

D'Lish Dishes

 This low-carbohydrate salad can be served on its own or as an accompaniment to your favourite main course.

D'Lish Dishes - Seeet Potato Salad
Serves: 8
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Cost: $2.50 per serve


Ingredients:

Sweet Potato and bean salad500 g Kumera (Sweet Potato) (you can use pumpkin also)
1/2 teaspoon chilli oil
1 tablespoon olive oil
1/4 cup pistachios, roughly chopped
1 pinch sea salt
200g green beans

Dressing:
2 tablespoons olive oil
1 tablespoon lime juice
1 clove garlic, crushed
1 tablespoon honey
pinch of chilli flakes
3 handfuls of baby spinach

Utensils:

Chopping board
Sharp knife

Vegetable peeler
Baking Dish
Microwave or steamer
Small jar to mix dressing in
Serving dish

  1. Preheat oven to 180 degrees
  2. Place the Kumera on a baking tray with the chilli oil and 1 tablespoon olive oil, pistachios and sea salt
  3. Roast for 20 minutes
  4. Steam the beans until tender.  Drain and refresh in cold water
  5. To make the dressing, combine olive oil, lime juice, garlic, honey, and chilli flakes in a small jar and shake
  6. Place spinach leaves and green beans on serving platter
  7. Add salad dressing and top with roast Kumera and pistachios
