D'Lish Dishes

 This healthy dish has a fresh and modern twist to a chicken casserole.

A variety of tomatoes at flavour and delicious juices.

D'Lish Dishes - Healthy Chicken & Vegetables
Serves: 6
Preparation Time: 20 minutes
Cooking Time: 45 minutes
Cost: $6.00 per serve


Ingredients:

Chicken & Vegetables2 carrots
6 squash
6 new potatoes
1 kilo mixed tomatoes (cherry, vine, roman, etc)
200g broccoli (or a bunch of broccolini)
Mixed fresh herbs (thyme, oregano, marjoram - whatever you like)
500g chicken thigh fillets (thigh fillets remain juicier when cooked)
30ml olive oil

Utensils:

Chopping board
Sharp knife

Vegetable peeler
Blender
Ovenproof dish

  1. Preheat oven to 180 degrees
  2. Parboil Potatoes until just soft (either in a saucepan of boiling water or in the microwave)
  3. Chop the vegetables into small pieces
  4. Chop the chicken into small pieces
  5. Place chicken and vegetables into ovenproof dish
  6. Blend herbs and oil together
  7. Drizzle herbs & oil mixture over top of chicken & vegetables
  8. Bake in moderate oven for 45 minutes
