Ingredients:
2 carrots
6 squash
6 new potatoes
1 kilo mixed tomatoes (cherry, vine, roman, etc)
200g broccoli (or a bunch of broccolini)
Mixed fresh herbs (thyme, oregano, marjoram - whatever you like)
500g chicken thigh fillets (thigh fillets remain juicier when cooked)
30ml olive oil
Utensils:
Chopping board
Sharp knife
Vegetable peeler
Blender
Ovenproof dish
- Preheat oven to 180 degrees
- Parboil Potatoes until just soft (either in a saucepan of boiling water or in the microwave)
- Chop the vegetables into small pieces
- Chop the chicken into small pieces
- Place chicken and vegetables into ovenproof dish
- Blend herbs and oil together
- Drizzle herbs & oil mixture over top of chicken & vegetables
- Bake in moderate oven for 45 minutes
