This healthy vegetable soup is great as a meal on it's own or used as a light entree before the main course. This soup is suitable for freezing. |

Ingredients:
1 500g packet soup mix
1 ham bone or bacon bones to add flavour
4 carrots
6 sticks celery
2 onions
2 parsnip
1 bunch parsley
6 litres water
Utensils:
Chopping board
Sharp knife
Measuring cup
Large saucepan
- Chop the celery, onions, carrots and parsnip in to small pieces
- Wash the soup mix to reduce cloudiness in soup
- Place ham bones, chopped vegetables, soup mix and water in a large saucepan
- Bring to the boil, turn down and simmer for 60 minutes
- Add chopped parsley and simmer a further 30 minutes
- Serve with crusty bread
