Homemade Vegetable Lasagne

 D'Lish Dishes

 

This healthy vegetable dish is easy to make and tastes delicious.

It can be used as a meal served with salad or as a quick and easy snack.

This dish can also be served in slices and frozen as a healthy instant dinner.

 

D'Lish Dishes - Vegetable Lasagne
Serves: 8 adults
Preparation Time: 10 minutes
Cooking Time: 45 minutes + 30 minutes
Cost: $2.50 per serve


Ingredients:

Vegetable Lasagne1 packet fresh lasagne sheets (dried can also be used)
1 500g can 4 beans
1 200g can lentils
1 200g packet frozen spinach (fresh can be used)
1 300g can whole tomatoes
4 carrots
4 zuccini
4 squash
1 jar bechamel sauce (you can make your own if preferred)
500g grated cheese

Utensils:

Chopping board
Sharp knife
Can opener
Large saucepan
Baking Dish

  1. Place cans of beans, frozen spinach and finely chopped vegetables in the saucepan
  2. Bring to boil, turn down and simmer for 45 minutes
  3. Preheat oven to 180 degrees
  4. Place layer of vegetable mix in baking dish
  5. Cover with lasagne sheets, then bechamel sauce, then grated cheese
  6. Cover with another lasagne sheet
  7. Repeat steps 4 and 5
  8. Bake in moderate oven for 30 minutes, or until golden brown
  9. Serve with a fresh garden salad
