Ingredients:
1 pizza base
1 cup pasta sauce
300g plain light yogurt
200g grated mozzarella cheese
1 285g jar mango chutney
125g lamb fillets
1 piece sweet potato (kumera)
1 bunch broccolini
90g fetta (reduced fat)
Parmesan cheese to sprinkle on top
Utensils:
Chopping board
Sharp knife
Microwave dish
Pizza tray (or any other baking tray)
Baking paper
Pizza cutter
- Preheat oven to 180 degrees C
- Peel and chop the sweet potato and partially cook in the microwave
- Just cook (blanche) the chopped broccolini
- Place base on pizza tray covered with baking paper
- Spread the tomato sauce & yogurt on the base
- Spread the mango chutney over the sauce
- Place sweet potato & broccolinilace on the top
- Sprinkle with mozzarella cheese
- Place chopped fetta, mango and lamb pieces on top
- Sprinkle with parmesan cheese
- Cook for 30 minutes or until crisp and brown
