As more Australians enjoy a seafood lunch this BBQd fish is an easy and filling meal. Rainbow trout or any other favourite whole fish can be used. This recipe can also be baked in the oven.

Ingredients:
2 kilo whole fish cleaned and scaled (the fish shop will do this)
200g marinara
2 lemons
1 cup pasta or rice
100g rocket or any other asian greens you prefer
Fresh herbs (tarragon, sage, oregano ... whatever you like)
1/2 cup soy sauce
Utensils:
Chopping board
Sharp knife
Aluminium foil
Foil baking tray
- Cook pasta or rice until just done (not too much as it will continue to cook inside the fish)
- Combine marinara and cooked pasta or rice
- Place the fish on a large sheet of foil
- Stuff the fish with the marinara mixture
- Cover the fish with the rocket & chopped herbs
- Slice lemons and place on top of fish
- Pour soy sauce over fish
- Completely wrap and seal fish in the foil
- Bake on BBQ for 30-35 minutes
- Serve with your favourite salads and potatoes
