Salmon stuffed with Spinach, Ricotta, Fetta & Dijon Mustard Sauce

D'Lish Dishes

 These tasty salmon rolls are easy to prepare and present well.  The Dijon Mustard Sauce adds a nice tang to the meal.

D'Lish Dishes - Stuffed Salmon
Serves: 6
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Cost: $6.00 per serve


Ingredients:

Stuffed Salmon3 salmon fillets
1 cup ricotta cheese
1 cup crumbled fetta cheese
Salt and pepper to taste
1 cup packed baby spinach
Extra virgin olive oil
Chopped dill
Chopped oregano

Dijon Mustard Sauce:
1 tablespoon Dijon Mustard
3 tablespoons unsalted butter
1 dessertspoon Worcestershire sauce
1 tablespoon white vinegar
2 tablespoons olive oil

Utensils:

Chopping board
Sharp knife

Mixing bowl
Cooking twine
Baking dish
Small saucepan
Serving dish

  1. Preheat oven to 180 degrees
  2. Cut salmon pieces in half lengthways
  3. In a bowl, combine ricotta and fetta, mashing and stirring with a fork until well blended
  4. Season with salt and pepper
  5. Arrange half the spinach over the salmon pieces
  6. Evenly spread the cheese mixture on top of the spinach, then top with remaining spinach
  7. Gently roll up salmon and secure with cooking twine
  8. Place salmon in a baking dish coated with olive oil
  9. Brush the top and sides of the salmon with olive oil
  10. Sprinkle with salt and pepper and top with chopped dill and oregano
  11. Bake for 15 to 20 minutes, or until fish is just cooked through

Sauce:

  1. Combine all ingredients and heat until butter melts
  2. Stir to blend
  3. Pour over salmon and hot vegetables
