This delicious spinach pie is filled with toasted nuts and sesame seeds and is covered with light & crispy filo pastry. |

Ingredients:
2 bunches English Spinach
1 Leek
1 packet Filo Pastry
300ml thickened cream
250g mascarpone
500ml ricotta
65g pine nuts
110g slivered almonds
110g sesame seeds
Baking paper
Utensils:
Chopping board
Sharp knife
Baking tray
Ovenproof dish
Saucepan
- Preheat oven to 180 degrees
- Chop spinach and leek roughly
- Cook spinach and leek in a saucepan with a small amount of water until soft (almost like steaming)
- Stir in cream, ricotta and mascarpone into the spinach mixture
- Brown the nuts and sesame seeds in a making tray
- Place a layer of filo pastry in the baking dish
- Sprinkle with nuts
- Place 2 more layers of filo and nuts
- Spoon spinach mixture on top of pastry
- Screw up pieces of filo and place on top of spinach (they look a bit like a screwed up tissue)
- Cover the top with screwed up balls of pastry
- Sprinkle with the remainder of nuts
- Bake in oven for 45 minutes or until golden brown
