| Summer Prawn Salad | ||

This simple and easy salad can be served as an accompaniment or on it's own. Whilst prawns are used in this recipe, any of your favourite seafood can also be added.

Ingredients:
100g prawns (shelled with tail left on)
100g lettuce mix
250g vine ripened tomatoes
1 avocado
1 mango
Dressing - honey, mustard or mayonnaise or any other favourite
Walnut pieces can be added if desired
1/4 cup dessicated coconut
Utensils:
Chopping board
Sharp knife
Mixing bowl
- Cut tomatoes in half
- Chop mango and avocado in to small pieces
- Combine prawns, lettuce mix, chopped tomatoes, avocado and mango in a bowl
- Place mixture on individual serving dishes or one large serving dish
- Drizzle with dressing
- Sprinkle with coconut
- Add walnuts if desired
